Fruit Infused Coconut Water



There are 2 brands of natural & fresh coconut juice that I really like.
"O.N.E." & "Zico"

I've tried VitaCoCo twice. The first time I didn't like it, it seemed to have a mild salty taste to it. I thought maybe I just got a bad batch of coconut juice. Since all fresh coconut juices are not created equal I decided to give it one more chance when I saw that brand again at the store.

Nope. It still had a mild salty taste to it. It made me wonder if they were mass producing these because it tasted the same and I have never tasted fresh coconut juice that salty before??

Anyways


I grew up drinking fresh coconut water and I loved everything about it. Everything about coconut.

Coconut cake

Coconut scent
Coconut water
Coconut, coconut, coconut

Did I mention coconut? I think you get the point here.

I also love fruit.

So when I thought of these infused coconut water, I had to share it with yall!

Infusing water/coconut water/ anything liquid is super easy.

Fruit Infused Coconut Water


(recipe given by counter clockwise)

Lime Coconut Water
  • 1/2 - 1 cup ice cubes
  • 1 8oz fresh coconut water (my two favorite so far are O.N.E. & Zico)
  • a few slices of Lime (depends upon your personal taste)

Mandarin Orange Blueberry Coconut Water

  • 1/2 - 1 cup ice cubes
  • 1/4 - 1/2 cup blueberries
  • 1 8oz fresh coconut water (my two favorite so far are O.N.E. & Zico)
  • a few slices of Mandarin Oranges (depends upon your personal taste)

Raspberry Lemonade Coconut Water

  • 1/2 - 1 cup ice cubes
  • 1/4 - 1/2 cup raspberries
  • 1 8oz fresh coconut water (my two favorite so far are O.N.E. & Zico)
  • a few slices of Lemon (depends upon your personal taste)

Strawberry Coconut Water
  • 1/2 - 1 cup ice cubes
  • 1/4 - 1/2 cup strawberries
  • 1 8oz fresh coconut water (my two favorite so far are O.N.E. & Zico)
Directions

Mix everything together in a drinking glass

Health Benefits of Coconut Water

  • Packed with potassium (as much as a banana)
  • Supports rapid hydration (great to drink after your workout)
  • Has a lower acidity than all the other sports drinks
  • Has 5 electrolytes (magnesium, sodium, calcium, potassium, phosphorus)
  • All natural!!

Fruit Salad with Cocoa Nibs

When I think of a fruit salad, I think of those boxed, overpriced salad bowls at the grocery store. How boring...and plus, you have no idea if they washed them, how they washed them or how long they've been soaking in their "fruit juices". Gross.

When I think of dark chocolate, I think of chocolate cupcakes and delicious frosting. Yum.

Unfortunately, neither of those are...healthy or fresh.

This fruit salad is rather exciting. It's refreshing and it definitely cures your desire for some chocolate. It's a really easy recipe and the best part is, you can eat this as a dessert or replace it with your side salad.



Fruit Salad with Cocoa Nibs
  • 1 Cup Strawberries, sliced
  • 2 Fresh Kiwis, sliced
  • 1 Cup fresh Pineapple Chunks
  • 1 Tbsp dark chocolate cocoa nibs (directions below)
  • 2 Tbsp maple syrup
Directions
  1. Throw all the fruits together in a bowl
  2. Drizzle maple syrup over salad & toss in cocoa nibs
Cocoa Nibs Directions


  1. Take the cocoa nibs and place them on a cutting board
  2. With a sharp knife begin chopping the chocolate as if you are mincing an onion
  3. Now you have cocoa nibs!

Tropical Papaya Smoothie


As the summer months slowly come to an end, this is what I imagine in my head. However, since I'm from Texas, beaches such as this photo don't exist...so I'm trying really hard to pretend that that sunset is right outside my window. Hey, a girl can dream right?

I can only assume you're here right now because you either have the August workout calendar and are checking out the smoothie recipe or you really are interested in the things I write...I'll take either answer!

If you've been following the calendar (first 4 days!), congratulations! I hope you have a fun time while going through each day.

Tropical Papaya Smoothie
  • 8 oz. Coconut Water 
  • 1/2 cup Frozen Pineapple, cubed
  • 1/2 cup Frozen Mango, cubed
  • 1/2 cup Fresh Papaya, cubed
  • 1 Fresh Banana
  • 1 tbsp. ground flaxseed (optional, but so healthy!)
Directions:
  1. Add in the Coconut Water
  2. Add in all of your fruits, if using ground flaxseed, add this in at the same time
  3. Blend and drink!

Berry Mandarin Salad


This salad is so great and refreshing for a hot summer day! I've been using fruits in my salads a lot lately, it gives my usual salad a burst of flavor. It makes it more interesting and not to boring. I'm a big spinach and fruit lover so incorporating the two into a salad has recently become one of my favorite things to do & eat. I don't know why I've never thought of it before!

I have a lot of other salad recipes that I will definitely be posting as soon as I can!

Berry Mandarin Salad
  • 4 Iceberg lettuce leaves
  • 1 big handful of baby spinach leaves
  • 4 whole strawberries, cut into fours
  • 1 handful of grapes
  • 6 mandarin oranges
  • 1 small handful of raw almonds
Directions:
  1. Mix everything together and use your desired salad dressing. (I used a light balsamic vinaigrette)

Faux Taco Sandwich

LOTS of things have happened this past month. I feel like if I listed everything, we'd never finish reading the list. Just know I've been super duper ridiculously busy.

Well, no matter how busy I am, everyday after school, I try my hardest to fit in a workout. Some nights, I simply don't get to because I have homework. SO WHAT?!

I think that's something people need to get through their heads. Don't punish yourself ever for not being able to do something. Whether you ate something "bad" or if you didn't work out. Whatever it is, don't punish yourself!

Anyways, everyday after school, I am SO hungry by the time I get home. (I am so used to eating at a certain time from my work hours) 

I should just say right now that I don't eat red meat. AT ALL. My sister still thinks I'm a crazy woman for giving it up three years ago. However, I DO eat chicken, turkey, and seafood. So no, I am not a vegetarian (I think I would die!!) The whole "not getting to eat tacos unless there's turkey meat in the freezer cause I don't eat beef and I just can't run to Taco Bell" scenario really makes me want tacos all the time!

This faux taco sandwich is something that is completely different from a regular sandwich because it uses a tortilla. Its technically not a taco but I ended up folding it like one and it just really reminded me of a taco. It doesn't taste like a taco whatsoever. It simply tastes like...a turkey sandwich on a tortilla bread. But I think it's something fun from a plain ol' sandwich.





There really isn't a recipe for this one cause it just uses items in your fridge and pantry. You could get creative and use a bunch of different things. Here's what it looks like on the inside. After the picture, you can see what was in this faux taco sandwich!




It might look weird (My mom had a really odd look on her face when she looked at it) but it tastes pretty darn good. Maybe I just like weird stuff? Nope, that's just not possible, Im the QUEEN of yummy food. DUH. ;)

Here's what you'll need to make this:
  • One La Tortilla Factory Smart & Delicious low carb high fiber Tortilla
  • 3 tbsp Light Ranch dressing (or your favorite, mustard works great too but I was out of it! You can cheat just a little but be generous with the amount!!)
  • 2 tbsp crumbled fat-free Feta cheese
  • 3-4 slices of deli style turkey slices
  • One handful (or more!) baby spinach (My favorite!!)
  • 2-3 slices fresh tomatoes (or however much)
Directions
  1. Lay tortilla on a plate and spread the light ranch dressing on the tortilla. Then spread the crumbled feta cheese over your dressing. (so that they can stick onto something) 
  2. Roll your turkey slices up and lay right on top of the tortilla bread which is now drizzled with dressing and feta cheese.
  3. Place your tomatoes on top of the turkey slices and then spread your baby spinach on top of your tomatoes.
  4. Fold like a taco and ENJOY!!

Chicken Spring Rolls



I have to admit to you that the day I started working out, I never once counted calories. And I still don't.

I don't expect you to not to but then again, I don't expect you to either. To me, when you start counting calories, you start limiting yourself. I'm sorry but I'd like to have my freedom. After all, I already AM eating healthy and working out, why should I also have to write down what I shove in my mouth? 

It's all about moderation and proportion!!

Yes. I look at calories per serving because just looking at the nutrition label will either make or break it for you. I'll post up a blog about what you need to look for and look OUT for when eating. Also, try to do your own grocery shopping. IF you can't, ask the person who buys it if they mind you coming along and making healthier decisions for everyone.

So, I believe that if I lost 31 pounds and never once counted calories, you can too. Sometimes I'll provide the calories per servings with my recipes, sometimes I wont. Because sometimes I'll go the extra million mile to figure all the nutritional information for you and sometimes I won't. 

Trust me, these are the foods I eat!!

Who knows, maybe one day I'll start counting calories. Until then, I'm gonna continue to do what I do, eat healthy & work out! If you really want to know how many calories are in my recipes, let me know and I will be so kind and write it all down for you. :)

Tuna Salad Pita Pocket

I hope everyone had a wonderful Christmas!! I know I did! My family never really eats as much as we do on Thanksgiving so I wasn't as stuffed as I was. Phew! I enjoyed being with the family and all the unnecessary gifts that I received. I enjoyed the giving of gifts I was able to give more! 


The year is coming to an end and that means the usual New Years Resolutions & of course New Years eve parties! Keep in touch and I'll be putting some great recipes up soon!


I have a hard time trying to tell people that this is something I eat because most people I know don't like tuna. Therefore, if they don't like tuna, they probably don't like fish. My sister's one of those people and no matter how many health benefits I tell her they have, she's still against any kind of fish.

Do you have any idea how healthy fish is for you?

I've come to the conclusion that no matter how beneficial fish is, if you've never liked fish, you'll probably never change your mind about it. Fish is one of those foods people either find nasty or tasty, so I understand. Maybe I can change your mind?

I'll pretend I did even if I didn't.
